✅Low Carb Lemon Strawberry Custard Popsicles
Makes 8-12 popsicles
Total carbs per serving: 2.7g
Net carbs per serving: 2g

➡Ingredients:
½ C low carb powdered sweetener like Swerve
1 tbsp grated lemon zest
¼ C fresh lemon juice
6 large egg yolks
1 tsp lemon extract
¼ tsp sea salt, fine grain
¼ C extra virgin coconut oil
1C unsweetened almond milk
1C strawberries, diced

✅Directions:
1. Add sweetener, zest, lemon juice, yolks, lemon extract and salt in a medium sauce pan and whisk to combine. Over medium heat, add coconut oil and whisk constantly until curd thickens and coats the back of a spoon, between 5-10 minutes. Important not the let the curd boil.
2. Pour mixture through a fine mesh strainer into a medium sized bowl (you may have to scrap some of the curd off underside of the strainer into the bowl). Place the bowl in a larger bowl filled with ice water to cool the curd for about 15 minutes.
3. Add almond milk and strawberries to the curd and whisk until well blended. Pour into popsicle molds and freeze for 4 hours.
4. To remove popsicles from molds, run hot water on molds to loosen the popsicles from the mold.
