Southern Style Collard Greens With Ham Hock

This is a delicious low carb side dish I grew up with, though I never thought of it in low carb terms back then. All the healthy vitamins in greens, a little bit of protein, and great healthy fat to really ramp up the flavor.

Yields: 12 servings; ~1/2 per serving

āž”Ingredients:
8 Slices thick bacon
Ā¼ C Onion, diced
16 oz. Collard greens, washed and chopped into 1ā€ size pieces
*1 Smoked ham hock
1 tsp. Salt
Ā½ tsp. Black pepper
Ā¼ tsp. Red pepper flakes
4 C Water, chicken or vegetable broth

šŸ””If you do not have a ham hock, you can use Ā½ C of diced ham.

āœ…Directions:
1. Cook bacon slices over medium heat until slightly browned and chewy (not crispy). Slice cooked slices into 1ā€ size pieces and place in bottom of crockpot along with rendered fat from cooking.
2. Next add the onions, collard greens, ham hock (slightly buried in the greens), salt, black and red peppers, and water to the crockpot. Make sure liquid slightly covers the greens. If not then you will want to stir the ingredients about half way through the cooking. Heat on low for 6 Ā½ hours.
3. Remove ham hock from crockpot after cooking; remove skin and use a fork to shred. Stir meat back into the crockpot and serve immediately.
