1/2 cup cilantro, chopped
1/2 tsp sea salt
1/4 tsp ground black pepper
2 cups low carb tomato sauce (if cooking in slow cooker)

1. In a bowl mix together meat, eggs, onion, garlic, cilantro and parmesan, salt and pepper.
2. Begin shaping mixture into golfball size balls (about 1.5″ – 2″ in diameter).

If you don’t have a slow cooker, I included a baking option for you.

1⃣Cooking Option 1: Baking
Preheat oven to 375. Place meatballs on a rimmed baking sheet and bake for 20 minutes, until meatballs brown and internal temperature reaches 165. Remove from sheet and serve with 1/4 cup of low carb tomato sauce if desired.

2⃣Cooking Option 2: Slow Cooked in Sauce
Place sauce on bottom of slow cooker. Add in raw meatballs and gently toss them in the sauce. Cover and set temperature to LOW and cook for about 4 hours. For those of you with fast cooking slow cookers (like Me), recommend checking at 2 hour mark.
