72 Calories/0.8g Protein/8g Fat/0.2g Fiber
8 ounces Full-fat cream cheese, softened
¼ C butter, softened or extra virgin coconut oil
2 tbsp. MCT oil or extra virgin coconut oil, melted
2 tbsp. Unsweetened cocoa powder
¼ C Swerve or other low carb sweetener, powdered
½ C Strong brewed black coffee, room-temperature
1 tsp. Rum extract (optional)
1. Place all ingredients into a blender and pulse until smooth. You may have to scrap down sides of blender during the process.
2. Next scoop 1-2 tablespoons of the mixture into each slot in a candy mold or ice cube tray.
3. Freeze for 2-3 hours until firm.
