Cauliflower Creamed Spinach (Very Creamy, Super Low Carb)

I love creamed spinach, but I don’t love the carbs. This is a keto friendly cauliflower creamed spinach, and it is very low carb.
You can transform this dish into a casserole by adding left over turkey and chopped mushrooms. It also tastes great on top of chicken or in an omelet.

✅Cauliflower Creamed Spinach
Servings: ~6; Serving Size: ~ ½ cup
Total carbs per serving: 2.4g
Total net carbs per serving: 1.2g

➡Ingredients:
1 Batch of Dot’s Cauliflower mash (video: https://www.youtube.com/watch?v=VVmNPYVvrog) . To make it a “puree,” simply process it LONGER until it’s very smooth.
½ tbsp. Olive Oil, coconut oil, ghee or fat of choice
½ tbsp. Shallots, finely chopped
2 Garlic cloves, minced
1 tsp. + a pinch Pink Himalayan salt
½ tsp. Ground black pepper
¼ tsp. Ground nutmeg
9 oz. Spinach, washed and dried

✅Creamed Spinach Directions
1. In a medium pot, heat olive oil on medium-low heat. Add in shallots, garlic and a pinch of salt (1/8 tsp.). Cook until shallots and garlic are soft, but now brown, about 2 minutes. Be sure to stir often to avoid browning.
2. Combine the cauliflower puree, half of the salt, black pepper, and nutmeg in the pot. Stir occasionally to avoid cauliflower browning. Cook until cauliflower starts bubbling, about 3-4 minutes.
3. Add half of the spinach to the pot and stir into the cauliflower until wilted. Repeat with remaining spinach. Salt and pepper to taste.
4. Serve immediately.
