1 Celery head (~500g/4-5 cups), chopped with leaves; reserve a few leaves for topping
1 Small onion (110g/2 ½” diameter), chopped
1 Small head cauliflower, (265g/4” diameter) chopped
Kosher salt, to taste
4 tbsp. Unsalted butter
*3-4 C Chicken bone broth
¼ C Fresh dill weed
½ C Heavy cream
4 tsp. Extra virgin olive oil, divided, for topping (optional)

🔔Note: How much broth you add will determine how thick or thin you would like the soup. The nutrition information is for 4 cups of bone broth.

1. In a medium saucepan, over medium heat, add the butter, celery, onion, cauliflower, and salt; stirring frequently, cook until onions are tender, about 8 minutes.
2. Add broth and stir in celery leaves; simmer soup until vegetables are tender, about 10 minutes.
3. Working in batches, puree the soup in the blender with the dill. Place the soup back into the saucepan and add more salt if needed; stir in heavy cream.
4. Serve the soup topped with celery leaves, olive oil and flakey salt if desired.
