➡Ingredients:
1 tbsp. lard, ghee or butter
½ medium yellow onion
1/3 C diced red pepper
Sea salt
Ground black pepper
1 lbs. ground pork sausage
¼ C shredded Parmesan cheese
1 C marinara Sauce (Link to Dot’s recipe: https://youtu.be/XiBkn8zUJm8)
3 plum tomatoes, chopped
1 tsp. red pepper flakes
4 large eggs
✅Directions:
1. Preheat oven to 400.
2. Melt lard in an ovenproof skillet over medium heat. Add onion and red pepper; season with salt and pepper; sauté until onion is translucent, about 5 minutes.
3. Add ground pork to skillet, breaking apart the meat with a spatula. Half way through cooking pork, add in chopped tomatoes and mix ingredients together.
4. Once the pork is done and the tomatoes have started to breakdown, add in marinara sauce, cheese and red pepper. Stir all the ingredients together and let simmer for about 5 minutes.
5. Remove from heat and create 4 small wells in the mixture and crack an egg into each well. Sprinkle salt and pepper over the eggs. Place in the oven and bake until eggs reach desired consistency, about 10-15 minutes. Serve immediately.
