Many low carb eaters have tried sweet potato fries at one point or other. But what about parsnip fries? Or rutabaga fries? In this video, through use of the finest scientific instruments (tastebuds) and several complicated Latin words, I compare the french fry qualities of all three root vegetables. 🔔NOTE: All temperatures are for regular stoves. Convection stoves, if you put in these numbers, will automatically deduct the appropriate number of degrees to reach the right temperature. For example, 400 degrees will turn into 375.
1⃣Fry Test #1: Sweet Potato
Servings: 4-6
*Total Carbs per serving: 19.6g
*Total Net carbs per serving: 16.7g
*Carb counts based on 4 people; if making for 6, carb counts drop to 13g and 11g, respectively.
➡Ingredients:
3 sweet potatoes, 5” long each (390g or 13.8 ounces total); peeled and sliced to 1/4 inch diameter.
1 tsp. Dot’s salt seasoning (https://youtu.be/cQ7leP4vDGg)
*(and/or seasoning of your choice. In the video, I added 1/4 tsp of smoked paprika per fry group)
Olive oil, for tossing
✅Directions:
1. Preheat oven to 450 degrees
2. Line a rimmed baking sheet with parchment paper.
3. In a bowl toss sweet potatoes with oil to coat all fries; Sprinkle with salt seasoning or seasoning of choice.
4. Spread fries on baking sheet, being sure not to overlap or overcrowd. Place tray on upper 3rd of oven and bake for 20 minutes or until sweet potatoes are tender.
5. Remove from oven and cool for 3-5 minutes.
2⃣Fry Test #2: Rutabaga
Servings: 4
Total Carbs per serving: 8.3g
Total Net carbs per serving: 6.1g
➡Ingredients:
1 Medium rutabaga (386g or 13.5 oz) washed, peeled and sliced to 1/4 inch diameter.
1 tsp. Dot’s salt seasoning
*(and/or seasoning of your choice. In the video, I added 1/4 tsp of smoked paprika per fry group)
Olive oil, for tossing
✅Directions:
1. Preheat oven to 425 degrees
2. Line a rimmed baking sheet with parchment paper.
3. In a bowl toss sweet potatoes with oil to coat all fries; Sprinkle with salt seasoning or seasoning of choice.
4. Spread fries on baking sheet, being sure not to overlap or overcrowd. Place the try in the lower 1/3 of the oven and bake for 35 minutes, making sure to flip/stir the fries half way through.
5. Remove from oven and cool for 5 minutes.
3⃣Fry Test #3: Parsnip
Servings: 4
Total Carbs per serving: 13.5g
Total Net carbs per serving: 9.8g
➡Ingredients:
3 Parsnips, medium (300g or 10.5 ounces total) washed, peeled and sliced to 1/4-inch diameter.
1 tsp. Dot’s salt seasoning
*(and/or seasoning of your choice. In the video, I added 1/4 tsp of smoked paprika per fry group)
Olive oil, for tossing
✅Directions:
1. Preheat oven to 400 degrees; place parchment paper on rimmed baking sheet.
2. In a medium bowl, toss sliced parsnips with oil and seasonings. Place fries in a single layer on baking sheet, spreading out evenly.
3. Place baking sheet on lower third of the oven and bake for 20 minutes; then turn fries over; bake for 5-10 minutes longer, watching closely to make sure fries don’t burn, especially smaller cuts.
4. Remove fries from oven and wait 5-10 minutes to serve.
