✅Low Carb (And Sugar-Free) Tomato Sauce
Serving Size: ¼ cup; Yields approximately 3 cups
Carbs: 4g (3g net carbs)
4 Large tomatoes, cored and diced (about 2 pounds)
¼ Cup extra virgin olive oil
1 Bulb roasted garlic (or substitute 3-4 minced garlic cloves)
1 Teaspoon sea salt
½ Teaspoon black pepper
1 Large onion, diced
1/2C Fresh basil, chopped
Puree tomatoes in blender or food processor.
Using a medium saucepan, heat onions and garlic over medium high heat. Cook until onions are softened, about 5 minutes. Next add tomatoes, salt, pepper and basil. Over Medium-high heat, bring to simmer and cook for at least 25-30 minutes (stirring occasionally) to reduce excess liquid for desired thickness. Cook for 15-20 minutes longer for pizza sauce.
