My version of Bacon and Turkey soup. To lower the carb count I used an orange bell pepper instead of a sweet potato. Still got my splash of orange and comfort out of the soup on a very cold Virginia day.

My 15-pound bird yielded a lot of meat. I wanted to do something different with the leftovers than the standard turkey sandwiches (on oopsie bread of course!). So I thought of making a soup. I found a lovely recipe on I Breath. I’m HungrySmokey Bacon and Turkey Chowder.

I just made a few minor changes to the recipe, based on what I had in my house. My goal was not to run out to the grocery store for leftover soup.

My Changes
I used Applegate Naturals Uncured Sunday Bacon* rather than the cherry hardwood smoked bacon. While I love the idea of cherry hardwood smoked bacon, I can’t find any in my neck of the woods that is uncured with sugar. Powering through my new ketogenic cookbook, I spent a lovely evening making a marinara sauce for two dishes I’m making – Meatballs with Zucchini Noodles and a Pizza Casserole (recipe coming).

I love tomatoes, especially tomato-based sauces. While I’ve tried making my own sauce, it was mostly cooking down diced roma tomatoes in olive oil for a few minutes. Nothing to write home about.

Typically I’d just hunt the grocery store for the lowest carb sauce I can find. Not an easy task as many include added sugar.

Chicken Breast Sautéed in Clarified Butter

Tried another fantastic Julia Child recipe last night – skinless chicken breast sautéed in clarified butter (or ghee). The flavors were incredible and with just a half a cup of fresh green beans, one of our most filling and satisfying dinners.

The Julia Child style of cooking always intimidated me. Besides the fear of using so much fat (boy was I wrong!), I think the mystique of French food frightened me off.

Turns out these recipes are so simple I can kick myself for not cooking this way sooner.

I did make one change to this recipe to cut down the carbs. Rather than using 1 cup of flour, I opted for 4 tbsp. of almond flour (one for each breast). That cut the total recipe carbs from 13g to 2g without sacrificing taste. Read More
