Typically my husband and I celebrate Thanksgiving with friends and have our own low carb Turkey Day over the weekend. This year is no different. This Thursday I will be eating more carbs than normal. But it is the holiday, so I’m not stressing over it. What I am stressing over is finding a low carb stuffing recipe to make on Saturday.

For the last few years I’ve tried different recipes, and they turned into disasters. The “bread” – made from almond OR hazelnut flours – always turned out too heavy, lumpy, or grainy. Also, it tasted like a mock stuffing. Not really what I was going for.

Low Carb Bacon & Egg McMuffin

This morning I tried a new recipe — the Paleo Sausage Egg Mcmuffin. I just replaced the sausage with bacon and, at the hubby’s urging, placed everything on Oopsie bread. So that added 1.2g of net carbs to my morning meal. Not a big deal as it was delicious.

Oopsie! Bread Is Back On My Menu

One thing about going low carb is that my husband misses hamburger buns. He just loves ’em. So this weekend I turned my mad baking skills loose on Oopsies. I’ve heard about Oopsies and it just didn’t make sense. A nearly zero carb “bread” made from cream cheese and eggs…really?

Ugh! Why didn’t I bake these sooner? They taste soooo good. And they are a perfect replacement for buns (hamburger or hot dog) or wraps. Heck, I used one this morning as a faux taco shell to hold my scrambled eggs and salsa.

For those of you on Weight Watchers, 1 Oopsie is worth 2 points.  Considering I haven’t had a hamburger bun for nearly 2 years, I don’t have a problem with putting my points towards Oopsies once or twice a week.
