Between the torn meniscus and my Achilles tendon acting up this week, it was time to retire my old Nikes and invest in some running and cross training shoes. On the advice of my running pals, I visited my local Pacers, a family owned running store in the DC area.

I was very impressed with the staff’s expertise in all things running and how darn friendly they were too!

When I walked in, most were shocked by the state of my current footwear. Both of my big toes were protruding from the top of the shoes. And both heels were worn down. I might as well walk in barefoot; it would have been more comfortable.

Amazingly, Awesome Scrambled Eggs

Eggs are one of the most healthiest foods you can eat and a staple on this low carb gal’s breakfast table. Whether over-easy, sunny-side up, or as an omelet, eggs are just awesome. But there is one style of egg cookery that I have yet to master – scrambled.

Confession time: I’m ashamed to admit that my husband makes a superior scrambled egg than me. I couldn’t understand how that was possible and assumed he sold his soul in exchange for mastering this culinary delight.

But yesterday I discovered the true source of his scrambled egg power….a video.

I too can master the perfect scrambled egg. But I don’t dare tell the hubby I discovered his secret…otherwise he’ll expect me to start cooking them all the time.

 


Which Oils Are Best For Cooking?

I found this on Authority Nutrition’s Facebook Page and just had to share. H/T to Balancedbites.com for putting together this nice little infographic explaining which fats and oils are best for cooking.

Why is this important? Fats and oils can undergo changes with high heat if they are not stable. Once the oil reaches it’s smoke point (the temperature oil begins to breakdown and release smoke) it starts to produce toxic substances. Never eat an unstable oil once it starts to smoke.

A long time user of olive oil, I recently switched over to cooking with extra virgin coconut oil, butter and ghee. The coconut oil taste awesome and is very healthy. There are two types of coconut oil — virgin or RBD (refind, bleached, and deodorized). I use extra virgin because it is less processed and it still has a nice coconut flavor and aroma. RBD coconut oil is processed so you can’t taste or smell any trace of coconut.  I actually like the taste and smell, but I’m careful with how much I use. You don’t want to over power the food with the coconut flavor. Remember, a little goes a long way.

I started using ghee during my Paleo challenge. I love the stuff. Ghee, also known as clarified butter, is basically butter without the dairy solids. It has a lovely gold color and nutty flavor. Since I’m not doing Paleo, I switch between butter and ghee.

As for my trusty old olive oil, I still cook with it on occasion.  But I now use it for salad dressings and marinades.

When it comes to weight loss, I’m my worst critic. On days where I feel I’m not making any progress, I need a little power boost to completely shift my attitude. That little boost is a song.  Oh not any song, but my very own personal theme song. You know, the song that should play as you strut into a room.

A personal theme song isn’t necessarily your all-time favorite song. It’s the embodiment of who you are and changes as your life changes.  I’ve had a few in my life – Brick House and Beautiful Day to name a couple.

A personal theme song should speak directly to you about what you are going through or the goal you are after.  As soon as I heard Free Me, I knew it was the perfect theme song for my weight loss journey. The lyrics perfectly matched my attitude.

“And if there’s one thing I will say to you
Is that there is nothing that you can’t do
‘Cause it’s all about your attitude…
Now don’t tell me that I won’t, I can
Don’t tell me that I’m not, I am”

It’s no secret that music is a great motivator and can improve mood. It’s common for me to jog past my house after a run because a song on my iPod is only halfway over.

While music improves my mood and makes me work harder during a workout, my personal theme song goes above and beyond the call of duty. It helps steel my resolve and send my confidence soaring . Whenever I listen to Free Me I get excited about the changes I’m making and forget about my doubts. My attitude completely shifts and like the song says, I know “there is nothing that I can’t do.”

Rack ’em Up — Finding The Perfect Bra Size

brasI did some emergency shopping today. My sports bras no longer give me the support I need during workouts. Just too much damn bouncing around. And frankly, my other bras’ cups seem to stand away from my breasts. Clearly it was time to resize the girls. Despite the lack of movement on the scale the last couple of weeks, I got a nice boost (pun intended) from the lady fitting me for a new bra – I dropped 2 band sizes!

Time to try on some new bras. The lady helping me suggested I try on a couple of sizes to see which styles fit the best.  Also, there was a question on my cup size. I went up a cup size the last time I was measured. This time I was on the fence.

The lady with the measuring tape gave me some helpful tips on what to look for when trying on bras.

Band Issues

  • Band Position – The band should sit level or low on your back. If it rises, go with a smaller band size.
  • Battle of the Back Bulge – Look at your back. Is there any skin bulging around the band? The band needs to fit snugly around the lest-fleshy part of the rib cage to reduce tissue spilling over the back and sides.
  • Bra Straps – If they dig into the shoulder, then the band is too loose. Nearly all the support comes from the band (who knew?). So no more loosening my straps to the max. That should stop those blasted things from falling off my shoulder.

Cup Issues

  • Flesh Spilling Out Under The Armpits – The cup is too shallow and is pushing tissue to the sides.
  • Space Between Bra & Breastbone – Bras shouldn’t lift away from your body. If it does, then the cup isn’t large enough.
  • Spillage – Tissue flowing over the top of the bra means either the band is not snug and low on your back and/or the cup is too small.

The tips worked great and I found a few bras that fit just right. Turns out the lower band size worked best and I’m still the same cup size…for now.

Cracking The Spice Code

Inner foodie unleashed! I’m learning how to use herbs & spices. Last night I made my first ever infused oil with fresh rosemary and garlic.

I love cooking. But lately my inner foodie is tired of following recipes. I want to create my own dishes but need to build up my food knowledge. I’m starting with herbs and spices, the Rosetta Stone of cooking.

Once you knowing how to use herbs and spices you’ll bring out the flavor in foods and send your taste buds into orbit.

The spice aisle at my local grocery store is a mystery to me.  Unlike my wine store, there are no guides to tell me what anise seed taste like or which dishes call for saffron. There are so many spices but I have no clue which ones go with fish.  Which herbs go well with asparagus? Do you use different spices if you fry or grill a burger? By cracking this code, I feel I can really unleash my creativity.

I picked up Herbs & Spices: The Cook’s Reference: a wonderful book covering about 120+ herbs and spices, and  loaded with great info on aroma, taste, buying, storing and instructions on how to cook with them.

I started this new adventure by infusing olive oil with fresh rosemary and garlic. I also made my own oven-dried tomatoes. Yes, these are very simple to do, but I had to start somewhere. Each baby step I take builds my confidence.

Rosemary-Garlic Infused Oil
Ingredients

  • Several springs of fresh rosemary
  • 8-10 cloves of garlic
  • bottle with airtight seal
  • extra virgin olive oil

Directions

  • Peal the garlic cloves and cut in half so they will fit into the bottle. Put the cloves in the bottle, making sure they are evenly distributed along the bottom.
  • Bruise the rosemary by rubbing or gently crushing the springs; place the sprigs in the bottle.
  • Add oil.
  • Close the bottle and keep in a cool dark place for 1-2 weeks.
  • Taste the oil and if you want a stronger flavoring, add more rosemary and garlic. Once infused, you can keep the oil in the refrigerator up to 2 months. The cold may make it cloudy, but that should clear up when it reaches room temperature.

Oven-Dried Tomatoes
Ingredients

  • 5-6 plum tomatoes
  • ½ tsp kosher salt
  • ¼ fresh ground black pepper
  • fresh herbs, like rosemary or thyme, (optional)
  • garlic cloves, chopped (optional)
  • extra virgin olive oil (optional)
  • Jar with lid

Directions

  • Preheat oven to 200 F.
  • Place an oven proof wire rack on top of a rimmed baking sheet.
  • Slice stem ends off of the tomatoes then cut each tomato in half lengthwise.
  • Place tomatoes in bowl and add in salt, pepper and herbs; mix well.
  • Place tomatoes, cut side up, on a rack.
  • Bake tomatoes in the oven for 5-6 hours (until wrinkled and shrunken). Cool completely on the rack.
  • Cut the tomatoes into strips or leave as is. If placing tomatoes in oil, add garlic and herbs to oil while tomatoes are in oven. Place tomatoes in a jar, and refrigerate up to 4 days. If not placing tomatoes in oil, store tomatoes in air-tight container in the fridge for several weeks.

Week 1 Of Paleo Diet: Sticker Shock!

I wrapped up my first week on the Paleo diet, and other than the “clean” eating, it was pretty much the same as my low carb diet. In fact, I saw no difference. Granted it’s only been one week, but I have to wonder if the price of organic produce, grass-fed beef and cage-free birds, really offers that much of a health benefit.

I bring up cost only because I saw a 37% cost increase in my weekly groceries. My weekly budget for groceries is $135. For my first week on Paleo, I spent $185.67. If I don’t change anything, that’s a $200 increase by the end of this little experiment. Ouch!

Part of the sticker shock I attribute to “start-up costs” – items like ghee, coconut oil that are pricy but I won’t run out of anytime soon. But the cost of “clean” meat I find hard to swallow, experiment or no.  It cost me $26.69 for 3 pounds of grass-fed ground beef. Normally I spend $16 for 7 pounds of regular ground beef (and that lasts for 3 weeks). I’m sorry, but for me to continue to spend that much on ground beef means that gold better come out the other end.

But, it’s not just beef, which is expensive (grass-fed or not), but “clean” chicken is costly too. All 3 pounds of a whole, cage-free chicken costs double the price of a 6-pound caged chicken ($11.97 vs. $5.97). Yes, I know the 6-pounder sat in a cage to get fat, that water was probably injected into the meat, and the farmer fed Foghorn hormones for good measure. But when you are a single-income family on a tight budget trying to stretch your dollars, “clean” eating means: food that doesn’t give you the trots!

Organic produce cost about $0.50-$0.70 per pound more than their non-organic counterparts. That doesn’t seem like much of a price difference, but it ended up costing me $20 more than buying non-organic produce.  I know some people will think that the price is worth it to eat healthier, tastier food.  But the truth is I couldn’t taste any difference, and the data is still out on whether organic is really healthier and budgets matter. In my home, $80 is a bill payment or 2 weeks of gas. It seems I’ll get more bang for my buck by using a vinegar wash to clean my non-organic fruits and vegetables.

Clearly going Paleo or eating “clean” is doable if you have other options for protein and have a larger food budget. However, if you have a limited budget, I’m just not sure it’s worth the cost.

I certainly didn’t think I’d harp so much on money for my first post on trying the Paleo diet. But for me, it is a BIG deal.  I promise to have more to say about the foods, recipes and my energy level throughout the challenge.

Losing weight is near impossible without focus and motivation. Well My Diet Coach by InspiredApps is a nifty little app to keep you moving forward or get you back on track after a slip.

It doesn’t have a lot of features, and I sort of like that. It’s not overly complicated and you don’t get bogged down with too many bells and whistles. You’ll find helpful reminders, from drinking water to meal planning, to keep you on track and build good eating habits.

Speaking of reinforcing good habits, I suggest starting out with setting 1-2 reminders. Playing with the app, I set up reminders for 10 habits. That proved too many as those little chimes drove me crazy all day. I’m limiting my reminders to 2 now and all is right with the world.

The app’s challenge section helps you get through the frenzy of everyday life – dining out, parties or sweet cravings to name a few. Just press a button and you’ll find multiple messages and tips to keep you focused.

I put that feature to the test last night as I wrestled with my old nemesis, night hunger. This one is a biggie for me, especially over the last few evenings.  Like clockwork, at midnight I went to open the fridge door. But this time I stopped and I pressed the “Night Hunger” challenge on the app. There I found a series of tips and messages to help talk me down. Awesome!

One of those messages (“Make sure you aren’t eating just because you are up late or bored”) was spot on. The app let me make that message a priority so when night hunger strikes again, it’s the first message I see.

For some reason the app is only for women. I’m not sure why that is as guys also have weight issues. Maybe it’s because guys look at weight loss differently then we do?

I started with the free version a few weeks ago but upgraded to Pro (only $0.99) on Saturday. The pro version includes a food craving panic button that helps talk you down. In an emergency, the app launches a countdown timer to help you get through the craving, which lasts 10-20 minutes on average.

You can also track your weight with the pro version (My Weight Watchers app tracks my weigh-ins, so I don’t use this feature).

Available for iPhone and Android, My Diet Coach is a great little app. It gives you the the little pat on the back or kick in the pants that we all need now and again.
