Healthy Version of Chipotle’s Beef Barbacoa

When I weighed 325 lbs. I loved going to Chipotle. I couldn’t get enough of their beef barbacoa. Once I made the decision to go low carb I said goodbye to Chipotle and never looked back. Oh sure, I could have just had the amazing pulled beef over lettuce rather than rice to cut back on the barbs. Well that my friends means 27g vs. 61g of carbs. Not worth it.

However, with a little creativity, that doesn’t mean I can’t make my own deliciously healthy and LCHF-friendly beef barbacoa.

This dish is so tasty it requires 2 videos. The first is for a smokey salsa — a key ingredient for the spicy & smokey beef dish. Or just plain tasty with LCHF “chips” and cut veggies.

The second, of course, is for the beef barbacoa itself.

Next time I’m going to try it with a green-salsa.

A LCHF Friendly Valentine’s Dinner

Well the hubby and I decided to eat in for the rest of the month. So that mean Valentine’s Day Dinner is at home this year. Below is one of my favorites I enjoy making for special occasions. I rarely make beef tenderloin steaks and that’s a shame. So tender when cooked to perfection. Wrapping it in bacon just heightens the flavor.

I don’t cook these steaks often because the cut seems so cost prohibitive (organic, grass-fed and no hormones and antibiotic cuts go for $28/pound). Ugh! Talk about short-sighted. Last year for Valentine’s we went to a nice steakhouse and spent $300 (steaks, sides, shared dessert, bottle of wine and tip). $300!!!!  The whole dinner in the video below set us back a whopping $30. Of course I didn’t buy wine.

When you have 22-pounds of turkey to eat, sandwiches can get little boring. Thankfully The Google has a lot of low carb options to consider.

I don’t know about you, but I always struggle with what to do with all the turkey leftovers from Thanksgiving dinner. I mean, there’s only so many turkey sandwiches on keto bread one can enjoy.

Knowing I was cooking a 22-pound bird (yes…a 22-pounder!), I did some homework before the big day. I found lots of low carb turkey recipes. LCHF Thanksgiving: Cooking The Turkey

Well it’s November. That means Thanksgiving will be here before you know it. So I’m working on some videos for what I’m cooking this Thanksgiving. This video I talk turkey. Specifically how to brown the sucker!

I will say that I’m a bit forgiving on the carb front on Thanksgiving, allowing up to 75g of carbs. But this year I’m trying to keep to 25-30g for myself. A tall order, but I think I can do it.

This technique works every time. Thanks to the wine, it does add 2g of carbs to each serving of turkey (leaving me 23-28g to work with), but man it is a beautiful bird that comes out of the oven each time…and juicy as heck.

Oh, and if you have a chest freezer at home try picking up extra frozen turkeys at your grocery store either the day before or right after Thanksgiving. That’s when they go on sale. Last year my husband picked up 10 Butterballs and I only have 2 left (one for Thanksgiving and Christmas).

And yes, they still taste good! Although turkeys are big ones like the 22 pounder above.

LCHF Quiche With Spinach, Sundried Tomatoes & Goat Cheese

A little project the hubby and I have been working on is now ready. No, not the quiche. Here’s a video we made of how I make my quiche.  Hope you enjoy the video as well as the dish. The goal is to post 2 videos a week on my new YouTube channel.

Oh, and since I’m doing the Whole 30 (more on that later) this month, don’t fear. The video was shot in August.  So no goat cheese for me in September (how sad).


Slow Cooked Pulled Pork & Low Carb Mustard BBQ Sauce

I’ve tried to make a pulled pork dish a few times over the last couple of years and found some success using rubs rather than sugary sauces. But the leftovers never stayed tender or moist.

So about a week ago I embarked on creating a mustard-based BBQ sauce without any sweeteners. I don’t think what I came up with is considered an official “according to Hoyle” South Carolina mustard sauce, but I loved it and that’s what counts.

The recipe for the sauce makes a little more than 2 cups. I ended up using just 1 cup and used up the rest on burgers, salads and steaks. Hmmmm…

Now when I say this is slow cooked, it is…about 6-7 hours in my Dutch oven at 300 degrees. I always thought it was an art to transforming tough cuts of meat into tender bites of deliciousness. But there is also a science to slow cooking meat too. It’s important that the temperature is low enough to breakdown the collagen in the meat – that’s what turns tough meat into tender, falling off the bone awesomeness. If you cook the collagen too quickly the meat turns tough as heck. Too slow and it never breaks down.

This recipe worked best if you season the pork and make the sauce the night before cooking the pork. It’s important to let the ingredients meld together overnight. Your taste buds will thank me. Read More
