I’m down 4 pounds this past week, bringing my total weight loss to 102 pounds!

Normally I post my weight info on the same day as weigh-ins, and I expected to do the same Saturday morning. But after stepping off that scale I immediately knew it wasn’t going to be like any other day.

You’d think I’d be jumping for joy once I reached that milestone. Losing 100 pounds is a big moment for sure, but celebrating was the farthest thing from my mind.

Yes, I crossed the century mark, but my journey is far from over. I started jotting down random thoughts and lessons I learned (some hard and some outright silly) and what I need to do to keep me on my path.

Pork Tenderloin with Maple-Mustard Sauce

What do I love about going low carb? I can always find wonderfully simple and tasty recipes. While flipping through the pages of my Atkins cookbook, I found a pork tenderloin recipe for tonight’s dinner.  I’m serving it with asparagus and a small mixed green salad. Because of the maple-mustard sauce, the tenderloin jumps from 0g to 3g of net carbs.

Roasted Pork Tenderloin with Maple-Mustard Sauce
Net Carbs: 3g
Weight Watchers Points Plus: 7
Serves 4

Ingredients

  • 1-Pound pork tenderloin
  • 1 Tbsp. virgin olive oil
  • 1 Tsp. salt
  • 1 Tsp. freshly ground pepper
  • 2 cloves garlic, chopped
  • 1 Tbsp. minced fresh sage
  • 1/2C chicken broth
  • 1/2C white wine
  • 2 Tbsp. Dijon mustard
  • 2 Tsp. sugar-free maple syrup
  • 2 Tbsp. cold butter, cut into cubes

Directions

  • Pre-heat oven to 450 F
  • Pat tenderloin dry with paper towels. Combine oil, salt, pepper, garlic and sage in a bowl to form a paste. Rub paste over tenderloin and place in roasting pan. Roast until done to taste (20-minutes for medium; instant-read thermometer inserted into the center of loin will register 145 F).  Transfer meat to cutting board and let rest while you prepare sauce.
  • Set pan over medium-high heat on stove. Add broth, wine, mustard and syrup; cook and stir, scrapping up brown bits from bottom of pan, until reduced by half, about 10 minutes. Turn off heat. Add butter and swirl pan to melt.
  • Slice tenderloin and serve with sauce.

Other than bacon (naturally), the tenderloin is my favorite cut of pork. Before going low carb, I cooked it once in a blue moon. Now pork tenderloin appears on our table once a week. It’s amazing and melts in your mouth if prepared the right way.  Too bad I don’t have bacon in my fridge now, otherwise I might wrap the bacon around the tenderloin. Hmmmmmmmmmm…bacon wrapped pig.

Fighting Late Night Hunger Blues

For the last couple of evenings, I’m feel famished at about 10:00 pm.  Rather than eat, I start chugging water. Thirty minutes later I’m hungry again once my bladder bursts. Something is afoot.

This is the beauty of keeping a food journal. I thumbed through my FitBook this morning and I found a potential culprit – protein. I’m averaging 3.5 oz. of protein at lunch and 4.5 oz. at dinner. Since I go low carb, I try not to go over six ounces of protein during breakfast, lunch or dinner.

Clearly I’m not near the 6 oz. limit per meal. But with the yoga and walks, I need to up my amount. Phew! An easy fix. I’ll find out tonight if this does the trick.


Carbivorous Rex

He stalks the fifth floor every Friday, nostrils flaring over the cubical canopy in search of an elusive scent. His heavy footsteps cause little cups of water to ripple as many as four cubes away.  Will there be bagels today?  Doughnuts?  Will there be both?  Does coming in twenty minutes late mean he’s stuck with the pink doughnuts with the weird sprinkles? Or will he have arrived in time for the jelly and chocolate cream-filled tasties?  He’s in luck: two doughnut boxes sit on the little table next to the VP’s office, closed and stacked on top of each other.

His breathing quickens as he tears towards his prey.  Behind him, someone shouts, “John, did you get my email…” but it sounds like “bla bla bla” and he pretends he doesn’t hear it.  An intern steps out of her cube but ducks back to avoid being trampled.  He arrives at the box and opens it, grabs one of the paper plates and loads a chocolate cream and a jelly onto it, but no more than that.  He’s on a diet.

For the last six months, the above scene played out every Friday.  Oh, did I say Friday?  How about every other day, at least, because there’s always random doughnuts and cakes and Panera  sandwiches and cookies from meetings with vendors and potlucks at my job. All the frickin’ time.  But that’s not the best part–I get to blame all this “bad luck” for my failure!  It’s the job causing me to fall off the program, not me. I’m just a victim in all this, why not have a doughnut?

For the last year, my weight loss program has focused on low carb eating.  Specificaly: the Atkins diet.

“But John L. Monk,” you say. “I thought Atkins was supposed to be easy.  You make it sound hard!

Easy, huh?  Let’s get real for a second: 160 million years of mammallian evolution telling you to shove everything tasty into your mouth before you starve to death is not something that can ever be overcome easily. It takes work.

In my case, it only took 3 days of work.

That’s right.  I sit here typing this up with no particularly strong cravings for doughnuts or ice cream or bread or pasta or rice or baked potatoes.  Would I want a doughnut if one appeared next to me?  Yeah.  Am I telling Dot we’re almost out of paper towels so I’ll have a reason to go to Giant and snag an eclair (they’re big) from the glass-enclosed Fortress of Awesomeness back by the deli?  Nope.  I’m actually not that hungry.  That’s one of the great things about Atkins–after a few days, a week in some cases, your craving for carbs goes away.  This is how I lost 60 pounds last year.

But natural selection…she’s mean.  It was around Christmas that I went to a fast food place and got a burger with the bun, and it’s been downhill ever since.  In my case, I can’t screw up or the cravings come back. So here’s my advice to anyone wanting to try Atkins: don’t screw up.

Not so easy or pleasant at first, I know–but it has to be better than turning into a monster at work and scaring the interns, right?

Wisdom Tooth Gone But Still Causing Havoc!

My sleep pattern is completely messed up. It all started with the 8 hour power nap Thursday afternoon.  On Friday I ended up going to bed 5 hours ago.

Couple my poor sleep pattern with eating only soup for the last 48  hours and you end up doing something incredibly stupid – A 3:00 a.m. IHOP run

Did I track it?  Yes. Pancakes, 2/3 glass of OJ and 3 oz of syrup equals 32.5 points and 182g carbs.  Yikes!  Clearly over my 25g of carbs/day.  The plus side? I still had my 49 weekly allowance points, so I’m still within Weight Watchers good graces.

Why did I go? Thanks to the tooth extraction on Thursday, I’ve been on a liquid diet up until late Friday. I decided I needed something a little more substantial but soft. 

Pancakes fit the bill.

I didn’t completely fall off the wagon.  I’m still within my daily and weekly points on Weight Watchers. However, since I’m trying to go low carb, this was a complete screw up. But in reality, once that tooth came out, my 25g carb limit was shot until Sunday anyway.

So no beating myself up. I ate it, tracked it, and accepted it. Now it’s time to move on.

 


Tooth Gone And I’m Puffing Up

It’s gone. My last upper wisdom tooth is no more. My face is starting to get all puffy. Time to apply my little ice pack…frozen peas! The whole thing took less than 90 seconds. I spent more time picking up my soft food at the grocery store than at the dentist this morning.

Pasta. My dental technician really stressed eating pasta…lots of pasta for the next few days. Great. What fattie doesn’t want medical approval to eat their favorite trigger food. My goal is to avoid pasta for as long as possible with my other food options.

Dentist approved foods include jello, pudding, and baby bear style (think about it) soup.  Oh, and my personal favorite, salt water starting on Friday. Yum.

Foods that made the naughty list – bacon, ground beef, steak, anything crunchy (good-bye salad!) and ice cream. All, except the ice cream, are staples on my low carb diet.

I ended up buying cream of tomato, butternut squash and chicken noodle soups, chocolate pudding (sugar-free), and whole milk.  My goal is to stick with the soups for the next 48 hours. If I can get to Saturday, I can then eat some chicken and more solid veggies.

Otherwise, I’m wearing comfy jammies, laying on the couch with remote in hand, ready to catch up on the adventures of Walter White and Jesse Pinkman.


Weekly Weigh-In: Down 1/2 Lbs

Finally got the scale moving in the right direction. I’m now 254.7, down 1/2 lbs.

I think my Texas trip was a bust. I didnt weigh-in during the trip, so how do I know? Just too many temptations (chips…lots of chips!) at the house.

So this week I stuck to my low carb plan and didn’t go over my daily points. Even though I had dinner out (twice!) with friends, I didn’t tap into my weekly allowance points either. Awesome.

Just need to keep it up. Plus, with the yoga starting back up, I’m confident that I’ll hit that damn 250 mark soon and put an end this plateau once and for all.


Getting Back Into The Swing Of Things

photoI’m still in Arizona helping out my mom. Today I weighed in and gained 0.2 lbs. Not bad. Considering I wasn’t completely on program…oh hell, the program went out the window.

While I did manage to get in a few walks when I first arrived in Arizona, that stopped this week. Why? Feeling a bit mopey. My energy’s been zapped. No doubt part of that is from missing dad, but bad food choices is the main culprit. I go off program and poof! I’m a slug.

I at least had the gumption to go to Weight Watchers – expecting to show a 10 lb gain mind you…OMG, I’m trying to score brownie points from myself!

So how bad was the eating this week? I reverted back to a bad habit – eating when bored. Ok, sure I’ve been eating lots of veggies and drinking my water. But I’ve also been gobbling down cheesy poofs (2 bags), blueberry scones (damn you Starbucks), fig newtons, and pumpernickel bagels courtesy of the new Einstein Bros that opened up across the way.

A few more carbs than I planned. No matter how I tried, I seemed bent on eating the junk food in mom’s pantry (or going out for tasty treats). Clearly I was craving comfort foods. But no more. Today I:

1. Trashed the cheesy poofs
2. Skipped Starbucks
3. Passed on the bagel

Yes, I did have one Fig Newton. Those suckers are yummy. But alas, it will be my last one for a long time.

And tomorrow I walk!

Funny, whenever I cut back on my carbs after a binge, I typically feel super tired. Not today. I’ve actually been somewhat productive, although a nap is in my very near future.


Clean Bill of Health

Went in for my annual physical today. I was trying to temper my excitement. With the weight loss and the increased energy levels, I was assuming good things. But we all know what happens when you assume. So I decided it was best if I was cautiously optimistic.

Turns out the numbers are better than I thought. The lab work showed my numbers significantly improved over last year. Since going low carb and getting off the couch, my:

HDL levels (good cholesterol) jumped 15 points
Blood sugar levels dropped back down into the normal range
Vitamin D levels, up 10 points, back into normal range

My doctor couldn’t be happier with the results. Obviously, the biggest change from a year ago was the weight loss – 65 lbs. I mentioned to him about training for the Tough Mudder when I hit 200 lbs. He wants me to get me on a treadmill for a heart stress test before doing something that intense. Makes sense. But he likes my plans to start going on day hikes this summer.

Also, if I keep up the weight loss, there is a real chance that I’ll be off the blood pressure meds by end of year. My blood pressure keeps improving with each visit. If I can hit 110/75 and do so consistently, then I can kiss those pills goodbye! Sweet.


Red Dollar Days Strike, Water Rentention Ensues

midolAbout a week earlier than expected, my period came a knocking this afternoon. How lovely. I found a nice eHow article on minimizing  water retention. Considering I’m doing a low carb diet, it should work like charm.  Although I need to add some berries into the mix this week.  Basically I’ll be cutting back on salt, drinking lots of non-carbonated water, and chowing on those leafy green carbs that are high in water content. Hopefully the scale will continue its downward trend when I weigh in this weekend, instead of adding 5 pounds of water. Sort of sucks since the brussels sprouts I was planning on roasting tonight are now off the menu as they add to the bloated feeling. Ugh!
